The basic blueprint

Pick a protein, pick some vegetables, toss everything in oil and seasoning, and roast at high heat. Chicken thighs, sausage, salmon, tofu, and shrimp all work. The vegetables roast in the rendered fat and juices, which is where a lot of the flavor comes from.

Mind the cook times

  • Dense vegetables like potatoes and carrots take longest, so give them a head start.
  • Quick-cooking items like shrimp, asparagus, or cherry tomatoes go in later.
  • Cut everything to sizes that match how long each item needs.

Do not crowd the pan
